Hot Bar Lead (Manufacturing)



We have an exciting new opportunity located at our newest store location in Sayville, NY! Our new FT Hot Bar Lead will be responsible for the daily execution and oversight of hot bar operations, ensuring exceptional quality, consistency, and presentation in line with company standards. The Hot Bar Lead will lead the team in following recipes, managing production schedules, maintaining food safety standards, and optimizing gross profit through smart product utilization.

Responsibilities
Execute and oversee daily hot bar menus in accordance with established recipes and production plans.Ensure recipe compliance and proper portioning to maintain consistency and food cost targets.Manage schedules and labor deployment for hot bar associates to ensure coverage during key service periods.Plan and set production for current and next-day menu items with a focus on efficiency and freshness.Utilize and manage existing menu items to drive gross profit performance while minimizing waste and shrink.Maintain strict adherence to safety and sanitation practices, ensuring compliance with health regulations at all times.Monitor and document hot food temperatures regularly to meet internal and external food safety standards.Operate compliance tools, including systems like Plumsense; experience with these platforms is a plus.Ensure hot bar display standards are met and maintained throughout service hours.Oversee the timely backfilling of items on the hot bar to ensure a full and attractive presentation.Lead shrink management efforts, including waste tracking and analysis to improve inventory efficiency.Stay highly focused during peak periods, ensuring quality, speed, and team coordination.Assist in other kitchen functions as needed, including prep, inventory, and cross-training support.Communicate effectively with both English- and Spanish-speaking team members.Demonstrate strong time management skills and the ability to multitask in a fast-paced environment.Other duties and functions as assigned

Requirements
High school diploma or equivalent23 years of experience in a culinary or food service leadership role, preferably in a retail or market setting.Strong knowledge of culinary techniques and hot food preparation.Proven ability to lead a team and maintain high operational standards.Familiarity with compliance and temperature monitoring tools (e.g., Plumsense).ServSafe or equivalent food safety certification preferred.Bilingual (Spanish/English) communication skills are a strong asset.Ability to work flexible hours, including weekends, holidays, and peak periods.

Working Conditions
Most of the time is spent moving about continuously on hard surfaces. There may be a need to frequently position oneself to examine and/or scan merchandise, including bending, climbing, crawling, handling, pulling, reaching, and stooping.May require lifting objects up to 30 pounds. May require lifting and moving heavy and/or awkward objects more than 30 pounds with assistance.Usually in a comfortable indoor environment surrounded by moving machinery and/or loud equipment that may require shouting in order to be heard. There could be exposure to temperature extremes from freezers, ovens, and/or coolers.There may be occasional exposure to cleaning agents.
